Ingredients
Salad
- 3 Chicken Breastsboneless skinless, cubed
- 6strips Baconcooked, chopped
- 2cup Wild Rice
- 2 Granny Smith Appleschopped
- 1/2cup Rasins
Dressing
- 1/2cup Coconut Milk
- 1/4cup Honey
- 2tbsp Apple Cider Vinegar
- 1tsp Sea Salt
Instructions
- Cook chicken breasts and cut into 1/2″ cubes.
- Cook bacon and chop into bite-sized pieces.
- Cook wild rice.
- Mix together all of the ingredients for the salad in a large bowl.
- Mix together ingredients for the dressing in a small bowl. Pour over the salad and stir until well combined.
- Serve immediately or it does work well to refrigerate to chill for a while to let the dressing soak into the salad.
Recipe Notes
- This salad does freeze well however keep in mind the apples may brown slightly. They still taste great – just might not look as fresh.
