  1. Cook the rice in 1 1/2 cups water. Bring it to a boil. Reduce the heat to low, cover and let cook for 15 minutes.
  2. While the rice is cooking, saute the carrots, mushrooms, bell pepper, and onion over medium heat in a large skillet. Season with some salt. Cook for about 5 minutes or until the carrots are soft and the onions are cooked through.
  3. Add the remaining oil and then the rice. Add the cumin, salt, and pepper. Saute, stirring often, until the rice has cooked through a bit – about 2-4 minutes.
  4. Add in the lime juice and cilantro. Stir and remove the rice from the pan to a bowl.
