Mexitot (Mexican Tater-Tot Hotdish)

Ingredients
- 1pound Ground Beefbrowned
- 1 Red Onionchopped
- 2cloves Garlic
- 1packet Taco Seasoning mix
- 1cup Enchilada Sauce
- 12oz Mexican Corn
- 1 Red Bell Pepper
- 12oz Refried Beans
- 3cups Shredded Mexican Cheese
- 32oz Frozen Tater Tots
- 1/2cup Salsa
- 2.25oz Black Olivessliced
- 4 Green Onionschopped
Instructions
- Brown the ground beef. Season with salt while browning.
- Once the beef is nearly browned, add the onion and garlic.
- Add the taco seasoning, bell pepper, corn, and enchilada sauce. Mix together and cook 3-5 minutes.
- Spread the meat mixture into a greased 9×13 glass baking dish.
- Spread the refried beans over the top of the meat. Work with small globs spreading them out.
- Sprinkle salsa over the top of the beans.
- Next add a layer of 1 cup of cheese.
- Place the tater-tots on an even layer over the top of the cheese layer.
- Top with the remaining cheese.
- Bake in a 400° oven for 30 minutes.
- Top with black olives and green onions.
Recipe Notes
- You can make your own taco seasoning with:
- 1 1/2 tsp Cumin
- 1/2 tsp Black Pepper
- 1/2 tsp Cayenne Pepper
- 1/2 tsp Salt
- Additional toppings could be added when serving if you’d like:
- Sour Cream
- Lettuce
- Tomatoes
