Sweet Asian Pork Stir Fry (AIP)

Pork chunks with vegetables and a punch of sweetness from pineapple served over rice.  This recipe is a homemade dish that will take away your desire to go to a Chinese restaurant.

Fresh vegetables, sweet pineapple, and pork chunks over a bed of rice. This dish is is a Chinese comfort food dish in my household!

You can’t go wrong with this dish – it’s a pile of freshness over warm yummy rice.  And for anyone following an AIP or Paleo or Gluten Free diet this is right up your alley.

This dish isn’t spicy.  But if you prefer that and your diet allows for it, feel free to add in some red-pepper flakes or other favorite hot sauce as you wish.

Instructions

  1. Cook rice.
  2. While rice is cooking, brown the pork in a large skillet over medium heat.
  3. Once pork has cooked through, add in the onion and carrots. Saute for 5 minutes. Add in spices.
  4. Add the pineapple. Cook for another 3-5 minutes.
  5. Add the broccoli, garlic, mushrooms, and coconut aminos and cook until the broccoli and mushrooms are soft.
  6. Serve the pork mixture over the rice.
