This was actually easier to do than it might sound and will be added to our list of favorite meals I&#8217;ve made.<\/figcaption><\/figure>\n<h2>Chicken<\/h2>\n<ul>\n<li>2 frozen chicken breasts<\/li>\n<li>3 cloves of\u00a0garlic<\/li>\n<li>Chopped zucchini<\/li>\n<li>1\/2 can of corn<\/li>\n<li>1\/2 of a jalape\u00f1o<\/li>\n<li>1\/4 of a bell pepper<\/li>\n<li>1\/2 of a red onion<\/li>\n<li>Cilantro (I don&#8217;t think you can have too much &#8211; such good flavor)<\/li>\n<li>Fresh squeezed lime<\/li>\n<li>Bay leaves<\/li>\n<li>Chili powder<\/li>\n<li>Fresh ground black pepper<\/li>\n<li>Season salt<\/li>\n<li>Water<\/li>\n<\/ul>\n<h2>Toppings<\/h2>\n<ul>\n<li>Tortillas (I used <a title=\"Corn Tortillas Recipe\" href=\"https:\/\/promincproductions.com\/blog\/corn-tortillas-recipe\/\" target=\"_blank\" data-lasso-id=\"185\" rel=\"noopener\">fresh home made corn tortillas<\/a>)<\/li>\n<li><a title=\"Fresh Pico de Gallo Recipe\" href=\"https:\/\/promincproductions.com\/blog\/fresh-pico-de-gallo-recipe\/\" target=\"_blank\" data-lasso-id=\"186\" rel=\"noopener\">Pico de Gallo<\/a><\/li>\n<li>Green leafy lettuce<\/li>\n<li>Colby jack shredded cheese<\/li>\n<li>Rice<\/li>\n<\/ul>\n<p>I like to cook using partially frozen chicken breasts. This helps to keep moisture in the meat. Place the chicken breasts in the pan with about 3\/4 of an inch of water, toss in a few bay leaves, and place a lid on the pan. Cook on a medium to low heat. If the water cooks out, be sure to add more, but not too much. You aren&#8217;t trying to make a soup, rather keep moisture in the meat.<\/p>\n<p>Once the chicken is nearly cooked through, add in the remaining ingredients and let cook down a bit more with a lid on the pan. \u00a0But be sure to save some lime juice and cilantro till the end though &#8211; it&#8217;s good to layer those flavors on at the very end to give a nice fresh zesty taste. \u00a0You may need to add a bit more water to keep the chicken moist. \u00a0In\u00a0the end you don&#8217;t want liquid in the pan, but you can cook that off if there is. I&#8217;d avoid draining liquid and instead cook it off because draining will drain away some of the flavor as well.<\/p>\n<p>When\u00a0the chicken is cooked through, remove the bay leaves and then take two forks and start to shred the meat. Hold the two forks, one in each hand, with the rounded portions facing each other. Dig into the meat and pull apart. Do this until it&#8217;s all shredded.<\/p>\n<figure id=\"attachment_342\" aria-describedby=\"caption-attachment-342\" style=\"width: 375px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/promincproductions.com\/blog\/wp-content\/uploads\/2014\/07\/IMG_2076.jpg\" data-lasso-id=\"187\" data-rel=\"lightbox-gallery-JGMGMKbr\" data-rl_title=\"\" data-rl_caption=\"\" title=\"\"><img decoding=\"async\" class=\"size-medium wp-image-342\" src=\"https:\/\/promincproductions.com\/blog\/wp-content\/uploads\/2014\/07\/IMG_2076-375x500.jpg\" alt=\"Using two forks, shred the chicken.\" width=\"375\" height=\"500\" srcset=\"https:\/\/promincproductions.com\/blog\/wp-content\/uploads\/2014\/07\/IMG_2076-375x500.jpg 375w, https:\/\/promincproductions.com\/blog\/wp-content\/uploads\/2014\/07\/IMG_2076-768x1024.jpg 768w, https:\/\/promincproductions.com\/blog\/wp-content\/uploads\/2014\/07\/IMG_2076-150x200.jpg 150w, https:\/\/promincproductions.com\/blog\/wp-content\/uploads\/2014\/07\/IMG_2076-600x800.jpg 600w\" sizes=\"(max-width: 375px) 100vw, 375px\" \/><\/a><figcaption id=\"caption-attachment-342\" class=\"wp-caption-text\">Using two forks, shred the chicken.<\/figcaption><\/figure>\n<p>I like to season through out the entire cooking process &#8211; starting when the chicken first gets into the pan. \u00a0While the chicken\u00a0is thawing out, the seasonings can start to work in. \u00a0Once it&#8217;s cooked\u00a0through is a good time to add more seasoning to let ensure that the flavors are really carried through. \u00a0I don&#8217;t typically season right at the last minute though\u00a0so it&#8217;s not too potent or just &#8220;tossed on top&#8221; &#8211; instead the meal carries the flavor.<\/p>\n<p>Once the the onions and peppers have cooked down to your liking, top the pan off with the remaining lime juice and cilantro and let that cook in just another 30 seconds or so before serving.<\/p>\n<p>You&#8217;re all set to enjoy!<\/p>\n<figure id=\"attachment_358\" aria-describedby=\"caption-attachment-358\" style=\"width: 500px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/promincproductions.com\/blog\/wp-content\/uploads\/2014\/07\/IMG_2092.jpg\" data-lasso-id=\"188\" data-rel=\"lightbox-gallery-JGMGMKbr\" data-rl_title=\"\" data-rl_caption=\"\" title=\"\"><img decoding=\"async\" class=\"size-medium wp-image-358\" src=\"https:\/\/promincproductions.com\/blog\/wp-content\/uploads\/2014\/07\/IMG_2092-500x375.jpg\" alt=\"Our table is set for fresh chicken taco night.
