{"id":519,"date":"2014-11-30T23:42:34","date_gmt":"2014-11-30T17:42:34","guid":{"rendered":"http:\/\/promincproductions.com\/blog\/?p=519"},"modified":"2015-07-04T18:57:25","modified_gmt":"2015-07-04T12:57:25","slug":"non-runny-apple-pie","status":"publish","type":"post","link":"https:\/\/promincproductions.com\/blog\/non-runny-apple-pie\/","title":{"rendered":"Non-Runny Apple Pie"},"content":{"rendered":"<p>I&#8217;ve made apple pies, apple crisps, etc. before and love them all. \u00a0However I always seem to have issue arise that bothers the heck out of me &#8211; they are runny! \u00a0While I and those I serve it to love the flavor, it&#8217;s frustrating and embarrassing to have it be so runny.<\/p>\n<p>For thanksgiving this year, I was asked to bring an apple pie. \u00a0Now the &#8220;easy&#8221; move is to just buy one, but that goes against what I stand for and hurts my pride just a bit&#8230; \u00a0Plus I know that I can produce a better tasting product for the same price or less than store-bought most of the time. \u00a0Though I was\u00a0getting nervous &#8211; I didn&#8217;t want to serve another runny apple pie&#8230;<\/p>\n<p>So I did what any distraught cook would do &#8211; check the internet for what others have done. \u00a0ha! \u00a0I have tried to find a solution to a runny apple pie before but never came up with much advice. \u00a0And I was getting the same answers this time &#8211; bake it longer, or use a different apple, or use flower in your apple coating. \u00a0I&#8217;m sure those ideas work, but just didn&#8217;t seem to be the right solution.<\/p>\n<p>So a bit more searching, and I found a recipe that seemed unique enough to what I&#8217;ve done in the past that just might do the trick, and figured why not give it a try. \u00a0After all, it is from the <a href=\"http:\/\/www.foodnetwork.com\/\" target=\"_blank\" data-lasso-id=\"256\" rel=\"noopener\">Food Network<\/a> who I do have culinary respect for.<\/p>\n<p>There are two techniques from this recipe that I was not doing before that after executing this recipe I now understand are critical to a runny free apple pie:<\/p>\n<ol>\n<li><b>Saut\u00e9\u00a0the apples in a pan<\/b>. \u00a0This does two things:\n<ol>\n<li>It unlocks some of the juices from the apple and releases them into the pan.<\/li>\n<li>It softens the apples a bit, which solves a second issue of the apples being too hard and crisp, or under-cooked by baking only.<\/li>\n<\/ol>\n<\/li>\n<li><strong>Create a syrup from the apple liquids<\/strong>. \u00a0Using the liquids above, cook separate\u00a0from the apples\u00a0with sugar until you caramelize the liquids and thus create a bit of a syrup.<\/li>\n<\/ol>\n<p>In my case, the syrup was still a bit runny while assembling the pie and even when I pulled it out of the oven. \u00a0However as the pie cooled so did the syrup and it turned into a perfect pie filling &#8211;
