Crock Pot Pulled Pork

Ingredients

  • 7 1/2 pounds Pork Shoulder Roast fat removed
  • 1 small Onion diced
  • 4 cloves Garlic diced
  • 1 tsp Basil, Dried
  • 1 tsp Oregano, Dried
  • 1 tsp Rosemary, Dried
  • 1 tsp Himalayan Sea Salt
  • 1/4 tsp Freshly Ground Black Peppercorn
  • 1/2 tsp Ground Ginger
  • 1/4 cup Coconut Aminos

Instructions

  • Trim as much of the large chunks of fat off of the pork roast. Place in crock pot.
  • Top with onion and garlic.
  • Mix the dry ingredients together. Sprinkle over the pork, trying to cover as much of the meat as possible.
  • Pour the coconut aminos over the top.
  • Cover. Cook on low for 8 hours.
  • Shred the pork and serve.

Notes

  • There should be juices/liquid in the crock pot at the end of the cooking time.  Do NOT drain this.  Shred the meat and put back into these juices.  The meat will absorb them adding flavor and moisture to the meat.
  • Soy Sauce or Worcestershire Sauce could be used as a substitute for Coconut Aminos.
  • There are several methods of shredding the pork.
    • Twist with a tongs.  Since the fat was trimmed after 8 hours it should fall apart quite easily.
    • Use two forks to pull apart the meat into shreds.
