Mexitot (Mexican Tater-Tot Hotdish)

Ingredients

  • 1 pound Ground Beef browned
  • 1 Red Onion chopped
  • 2 cloves Garlic
  • 1 packet Taco Seasoning mix
  • 1 cup Enchilada Sauce
  • 12 oz Mexican Corn
  • 1 Red Bell Pepper
  • 12 oz Refried Beans
  • 3 cups Shredded Mexican Cheese
  • 32 oz Frozen Tater Tots
  • 1/2 cup Salsa
  • 2.25 oz Black Olives sliced
  • 4 Green Onions chopped

Instructions

  • Brown the ground beef. Season with salt while browning.
  • Once the beef is nearly browned, add the onion and garlic.
  • Add the taco seasoning, bell pepper, corn, and enchilada sauce. Mix together and cook 3-5 minutes.
  • Spread the meat mixture into a greased 9x13 glass baking dish.
  • Spread the refried beans over the top of the meat. Work with small globs spreading them out.
  • Sprinkle salsa over the top of the beans.
  • Next add a layer of 1 cup of cheese.
  • Place the tater-tots on an even layer over the top of the cheese layer.
  • Top with the remaining cheese.
  • Bake in a 400° oven for 30 minutes.
  • Top with black olives and green onions.

Notes

  • You can make your own taco seasoning with:
    • 1 1/2 tsp Cumin
    • 1/2 tsp Black Pepper
    • 1/2 tsp Cayenne Pepper
    • 1/2 tsp Salt
  • Additional toppings could be added when serving if you'd like:
    • Sour Cream
    • Lettuce
    • Tomatoes
