Salad

Chicken Breasts
boneless skinless, cubed

Bacon
cooked, chopped

Wild Rice

Granny Smith Apples
chopped

Rasins
Dressing

Coconut Milk
1/4
cup
Honey

Apple Cider Vinegar

Instructions
Cook chicken breasts and cut into 1/2" cubes.
Cook bacon and chop into bite-sized pieces.
Cook wild rice.
Mix together all of the ingredients for the salad in a large bowl.
Mix together ingredients for the dressing in a small bowl. Pour over the salad and stir until well combined.
Serve immediately or it does work well to refrigerate to chill for a while to let the dressing soak into the salad.
Notes
This salad does freeze well however keep in mind the apples may brown slightly. They still taste great - just might not look as fresh.
