Chicken Wild Rice Salad

This is a great fresh tasting salad with sweet, savory, and salty all mixed into one.

This is a nice summer side dish or I even enjoy a large helping as a main dish for my lunches!

Ingredients

Salad

  • 3 Chicken Breasts boneless skinless, cubed
  • 6 strips Bacon cooked, chopped
  • 2 cup Wild Rice
  • 2 Granny Smith Apples chopped
  • 1/2 cup Rasins

Dressing

  • 1/2 cup Coconut Milk
  • 1/4 cup Honey
  • 2 tbsp Apple Cider Vinegar
  • 1 tsp Sea Salt

Instructions

  • Cook chicken breasts and cut into 1/2" cubes.
  • Cook bacon and chop into bite-sized pieces.
  • Cook wild rice.
  • Mix together all of the ingredients for the salad in a large bowl.
  • Mix together ingredients for the dressing in a small bowl. Pour over the salad and stir until well combined.
  • Serve immediately or it does work well to refrigerate to chill for a while to let the dressing soak into the salad.

Notes

  • This salad does freeze well however keep in mind the apples may brown slightly.  They still taste great - just might not look as fresh.
