Gluten Free Pasta Salad

I made this for my son’s 2nd birthday party and it was a big hit! We found it was best to make the pasta and mix it just a few minutes before guests arrive since gluten free pasta doesn’t always hold up as well as wheat pasta. You could easily substitute wheat pasta if you are able to eat gluten.

Gluten Free pasta salad with homemade Italian Dressing

Ingredients

Pasta

  • 2 pkgs Barilla Gluten Free Pasta Noodles Rotini
  • 1 jar Black Sliced Olives
  • 1 Red Bell Pepper, chopped
  • 1 pkg Hormel Natural Choice Uncured Pepperoni cut into 1/4ths

Italian Dressing Mix

  • 2 tbsp Oregano, Dried
  • 1 tbsp Parsley, Dried
  • 1/4 tsp Thyme, Dried
  • 1 tbsp Garlic Powder
  • 1 tbsp Onion Powder
  • 1 tbsp Coconut Sugar (or regular sugar)
  • 1 tsp Black Pepper
  • 1 tsp Sea Salt

Dressing, wet ingredients

  • 1/2 cup Apple Cider Vinegar
  • 2/3 cup Olive Oil

Instructions

  • Make the DAY OF event and right before serving:
  • Cook pasta, drain and RINSE in COLD water then drain. I made the pasta in two batches, one per box. 
  • Chop red pepper and pepperoni to size

Make Italian Dressing

  • Combine all dry ingredients in a jar with tight fitting lid, I used a 1 cup Pyrex container. Shake well to combine.
  • Combine 2 tbsp of the Italian Dressing Mix to 1/2 cup vinegar and 2/3 cup oil in a dressing container or mason jar. Shake or stir well to combine. There will be some additional Italian Dressing Mix leftover.
