Tater-tot hotdish is a classic comfort food and a staple in many households. This twist on the classic adds Mexican night in your household that will grab the attention of all members of the family!
I’ve made this and froze it for my lunches at work. While you loose the crispiness of the tater-tots and that nice fresh-baked cheese glow, it is one of my favorites for the workplace lunchtime and is an easy one to grab the jealous attention of your coworkers.

- 1 pound Ground Beef browned
- 1 Red Onion chopped
- 2 cloves Garlic
- 1 packet Taco Seasoning mix
- 1 cup Enchilada Sauce
- 12 oz Mexican Corn
- 1 Red Bell Pepper
- 12 oz Refried Beans
- 3 cups Shredded Mexican Cheese
- 32 oz Frozen Tater Tots
- 1/2 cup Salsa
- 2.25 oz Black Olives sliced
- 4 Green Onions chopped
- Brown the ground beef. Season with salt while browning.
- Once the beef is nearly browned, add the onion and garlic.
- Add the taco seasoning, bell pepper, corn, and enchilada sauce. Mix together and cook 3-5 minutes.
- Spread the meat mixture into a greased 9x13 glass baking dish.
- Spread the refried beans over the top of the meat. Work with small globs spreading them out.
- Sprinkle salsa over the top of the beans.
- Next add a layer of 1 cup of cheese.
- Place the tater-tots on an even layer over the top of the cheese layer.
- You can make your own taco seasoning with:
- 1 1/2 tsp Cumin
- 1/2 tsp Black Pepper
- 1/2 tsp Cayenne Pepper
- 1/2 tsp Salt
- Additional toppings could be added when serving if you'd like:
- Sour Cream
- Lettuce
- Tomatoes
