Mexitot (Mexican Tater-Tot Hotdish)

Tater-tot hotdish is a classic comfort food and a staple in many households.  This twist on the classic adds Mexican night in your household that will grab the attention of all members of the family!

Mexican tater tot hotdish is a spicy twist on a classic comfort food. Oh, did I mention it’s smothered in cheese?

I’ve made this and froze it for my lunches at work.  While you loose the crispiness of the tater-tots and that nice fresh-baked cheese glow, it is one of my favorites for the workplace lunchtime and is an easy one to grab the jealous attention of your coworkers.

Enjoy!  (or should I say ole!)

The enchilada sauce oozes out from under the layer of cheesy tots, accented with taco seasoning!
