Wild Rice Pulled Pork Hotdish

A nice savory dish combining the amazing flavors of pulled pork (one of my personal favorites) with the sweet tart flavor of Craisins.  It’s a medley of flavors that tickles your tastebuds with happiness!

One great thing about tis dish is you can make it super quick (assuming you have pre-cooked pulled pork) by just tossing all the ingredients together into a dish and microwave.  (Yes, I’m aware I just took the culinary level out of this recipe but I’m sorry – it’s time we all admit that we take the easy way out once in a while…)  The beauty here is that you can make a batch of these meals without really cooking or making many dishes, put them into storage containers and you have lunches for work that will get others turning their heads saying “ohh – what’s that?”.

  1. Combine all of the ingredients except the pork into a baking dish.
  2. Layer pork on top.
  3. Bake at 350° or 15 minutes until heated through.
