Bacon Potato Egg Bake

This is a great dish fresh or it re-heats well for lunches.

Bacon, cheese, potatoes, too much salt?  It’s a perfect mixture of some of my favorite things in life (favorite food items that is).

Even better, this recipe is super simple to throw together and thus can be made even when kitchen time is limited.

Bacon Potato Egg Bake

Ingredients

  • 1 bag Lynden Farms Diced Potatoes
  • 1 package Bacon cooked, chopped
  • 1 Green Pepper diced
  • 5 large Egg(s)
  • 16 ounces Sharp Cheddar Cheese divided
  • 1 tbsp Salt
  • Freshly Ground Black Peppercorn to taste

Instructions

  • Line a 9x13 baking dish with cooking spray, olive oil, coconut oil, etc.
  • Whisk the eggs in a bowl to break the yolks and blend together.
  • Mix all ingredients together (only use 1/2 to 3/4 of the cheese) and spread evenly into baking dish.
  • Spread remaining cheese over the top of the dish.
  • Bake at 350° for 45 minutes.
