Fresh pico is a one of a kind flavor in my mind that is amazing on the taste buds, rather amazingly simple to put together, and amazingly good for you. (Yes, I’m aware it’s typically paired with chips that knock down the health factor a bit, but there are healthy options there if you so choose…)
Below is the quick and simple recipe that I follow. This is great for eating with chips, on tacos, taco salads, on fish, mixed into rice… the list goes on. It’s just good – simple as that! Enjoy!
Fresh Pico de Gallo Recipe
Ingredients
- 3 Roma Tomatos chopped
- 1/2 Red Onion chopped
- 1/4 Green Pepper chopped
- 1 Jalapeño diced, optional
- 3 cloves Garlic diced
- 2 tbsp Cilantro chopped
- 1/2 Lime juice, squeezed
- 1/2 tsp Freshly Ground Black Peppercorn
Instructions
- Chop or dice the ingredients and toss into a bowl.
- Add black pepper to taste.
- Stir together and place in the refrigerator to chill. I prefer to let it chill overnight.
