Garden fresh veggies lightly sauted with a the slight saltiness of ham chunks bring your mouth to life. This AIP Green Bean and Ham Saute is a quick and easy meal to make that leaves you satisfied!
If you cooking AIP (Autoimmune Protocol) you likely spend a decent amount of time in the kitchen. That might be one of the your new go-to meals as it will free up some time. It has become part of our regular meal rotation in our household.
This recipe is very simple and quick to make. Essentially toss all of the fresh ingredients into the pan, put some heat through them to soften them up, and you are all set for a great meal. It also works great with asparagus (which is actually what is pictured here).
This dish is AIP friendly, but is a great meal for most any dietary concerns (or lack there of). If you can, you could pair this with some rice as well to round out the meal a bit fuller.
Make it your own
This AIP green bean ham saute recipe is very versatile as well. Whether you have a garden producing fresh produce or you forgot to use that bag of carrots leftover in the fridge from last week, feel free to be creative. Substitute green beans for asparagus – we do this all the time. Add in some carrot slices. Experiment with different types of mushrooms. Or add some sweet potato cubes. It’s a fun simple recipe that can help to clean out your produce supply.
- 1 pound Green Beans fresh and trimmed
- 1/2 Red Onion Chopped
- 1 cup Mushrooms Chopped
- 2 cups Ham cooked, 1" cubes
- 2 tbsp Olive Oil approximate
- Salt to taste
- Freshly Ground Black Peppercorn to taste, if re-introduced
- Coat the bottom of skillet with olive oil. Heat over medium heat.
- Add green beans. Drizzle more olive oil over the beans. Season with salt.
- Saute for 5 minutes, stirring occasionally.
- Add mushrooms and onion and continue to saute for another 5 minutes, stirring occasionally. Season again.
- Add ham to the pan. Saute for an additional 5 minutes or until the ham is warm and the vegetables are soft.
- Serve warm.
- Asparagus can be substituted for the green beans.
