Pork chunks with vegetables and a punch of sweetness from pineapple served over rice. This recipe is a homemade dish that will take away your desire to go to a Chinese restaurant.
You can’t go wrong with this dish – it’s a pile of freshness over warm yummy rice. And for anyone following an AIP or Paleo or Gluten Free diet this is right up your alley.
This dish isn’t spicy. But if you prefer that and your diet allows for it, feel free to add in some red-pepper flakes or other favorite hot sauce as you wish.
Sweet Asian Pork Stir Fry (AIP)
Ingredients
- 1 cup White Rice cooked
- 1 lb Boneless Pork Chops 1" cubes
- 1/2 Red Onion Chopped
- 3 cloves Garlic Sliced
- 2 cups Pineapple 1" cubes
- 4 Carrots Sliced diagonially
- 1 cup Mushrooms Chopped
- 1 head Broccoli Chopped
- 1 tbsp Coconut Aminos
- 1 tsp Sea Salt
- 1/2 tsp Garlic Powder
- 1/4 tsp Cloves
- 1/2 tsp Dried Thyme
Instructions
- Cook rice.
- While rice is cooking, brown the pork in a large skillet over medium heat.
- Once pork has cooked through, add in the onion and carrots. Saute for 5 minutes. Add in spices.
- Add the pineapple. Cook for another 3-5 minutes.
- Add the broccoli, garlic, mushrooms, and coconut aminos and cook until the broccoli and mushrooms are soft.
- Serve the pork mixture over the rice.
